Eggplant Medley Recipe

Eggplant is one of my favorite vegetables and its probably one of the easiest to find in the market. If you think serving eggplant dish is boring, wait till you taste Eggplant Medley Recipe from Chef Gen Capati of The Cookbook Kitchen.

Eggplant is a fruit of a plant originally from India, eggplant is botanically classified as a berry and is eaten as a vegetable. Eggplant can also be stuffed with meat, rice, or other fillings and then baked. Chef Gen Capati shares his Eggplant Medley Recipe, Hows the taste? Its perfect. Heres the recipe:)

Ingredients:

  • 4 tbsp olive oil
  • 1 tbsp. garlic
  • 1 tbsp. white onions
  • 2 medium sized eggplant
  • 400 grams ground pork
  • 1 cup mozzarella cheese, shredded
  • ½ cup quickmelt cheese, shredded
  • 2 tbsp. fresh dill, coarsely chopped
  • 1 cup pizzaiola sauce
  • Salt and pepper to taste

Pizzaiola Sauce

  • 3 tbsp. Olive oil
  • 2 tbsp. garlic, minced
  • 1 small can whole peeled tomatoes
  • Salt and pepper to taste

Procedure:
Pizzaiola
1. Saute garlic in olive oil.
2. Add whole peeled tomatoes.
3. Season with salt and pepper.
4. Simmer for 1 hour. Set Aside

Procedure:

1. Roast the eggplant, peel, slightly press using a forl to flatten. Set aside.

2. In a pan, saute garlic and onions in olive oil. Add ground pork. Season with salt and pepper. Set aside once pork is cooked.

3. In a baking dish, layer the eggplat, pizzaiola, meat. Top with quickmelt and Mozzarella cheese. Sprinkle dill on top.

4. Bake at 180 degrees Fahrenheit for 10-15 minutes, until cheese has melted.

5. Serve with pita bread.
