Beemster Graskaas for the unfamiliar is a rare, extra smooth cheese made in April from the first milking of the cows as they leave the barn for the first time after the cold, windy winter.
Beemster Cheese Casserole
The milk taken during the first weeks of Spring is the creamiest and is used to create a special edition cheese to be released at the Spring Cheese Festival.

- 5 ounces Beemster Graskaas
- 2 tablespoons olive oil
- 3 onion, sliced in rings
- 1 tablespoon caraway seeds
- freshly ground black pepper
- 4 slices of dark crusty bread
2 small casserole dishes, greased
Slice the cheese. Heat the olive oil in a frying pan and sauté the onion rings on medium heat for 6-8 minutes. Add the caraway seeds and season with pepper to taste.
Place the pieces of bread in the casserole dishes. Divide the sautéed onion and sliced tomato between them and top with the sliced cheese. Put the dishes on a rack in the middle of the oven and bake for 15-20 minutes until the cheese is melted and light golden brown.
