Grilled Seafood Kebab with Cherry Tomatoes Recipe
Kebab (also transliterated as kabab, kabob, kibob, kebhav, kephav) refers to a variety of meat dishes in Middle Eastern, Mediterranean, African, Central Asian, and South Asian cuisines, consisting of grilled or broiled meats on a skewer or stick. The most common kebabs include lamb and beef, although others use goat, chicken, fish, or shellfish.
This seafood kebab recipe is perfect for beginners. It only requires very few and easy to find ingredients, but is bursting with flavor. Seafood kebabs are very easy to prepare and cook, but the taste will make your guests think you have working all day!
Grilled Seafood Kebabs Ingredients
- 1 pound skinless salmon
- 1 pound medium sized shrimps
- 24 pieces chery tomatoes
- 1 medium zucchini
- 1 fresh basil leaves
- 1/2 cup olive oil
- 4 cloves of garlic
- 1 tablespoon salt
- 1 tablespoon black pepper
- Barbeque Skewers
Cooking Instructions
- Heat grill to high.
- Cut the fish and zucchini into cubes (1/2 inch)
- In blender, puree basil, olive oil, garlic until smooth then season with salt and black pepper.
- Devide the Puree into two, use the first half to marinate the fish and shrimp.
- Intermix the ingredients and place on long skewers. Coat with melted basil puree and place on preheated and hot grill.
- Grill 4-5 inches above glowing coals for about 3 minutes per side, brushing once with the remaining marinade.
- Finally, fish kebabs are done when the flesh goes from translucent to opaque. At that point, you can see the fish start to flake.
